Favourite Prawn Cocktail Recipe

A tasty and simple starter - my favourite prawn cocktail 

Recently I had some friends round for a meal and wanted to create a simple but tasty starter that I could make in advance.  I searched through my shelves of cookbooks and picked up ideas from some of my culinary heroes.  The result was this recipe which was very easy to do and also extremely delicious.  It is a take on the traditional prawn cocktail but with a few tweaks, for instance there is no mayonnaise but rather a salsa mix instead.

I did also add another secret ingredient, which isn't listed in the recipe, you may want to try adding this too, but it isn't essential.  It is some finely chopped pineapple rings (from a tin), just one or two depending on how many cocktails you are making.

You could easily increase this recipe for more people, just add a few more prawns...
